The following is a family favorite. My aunt gave my mother the recipe nearly 40 years ago. My cousins and I carry on the tradition each holiday, and now it’s moved to yet another generation — a favorite that my daughter prepares for her extended family celebration dinner every Thanksgiving.  I served it as an appetizer it for our family gathering last weekend, and it was as big a hit as ever.

2 – large bricks cream cheese, softened

1 cup sharp shredded cheddar cheese

1 small can crushed pineapple (well drained!)

1 teaspoon seasoning salt (I use Trader Joe’s 21 Seasonings)

1 – 2  tablespoon chopped onion (to taste)

1 1/2 cups chopped walnuts

After cream cheese is softened, mix in all ingredients except nuts.  If you have a heavy duty mixer, such as a Kitchen-Aide, it saves time when mixing. I’ve also used a potato masher, or donned plastic throw-away kitchen gloves and mixed by hand. When well blended, shape into a ball, roll in chopped nuts until covered, wrap in plastic wrap or foil and refrigerate till firm, preferably overnight. Serve with crackers.

This is always a hit at parties. I’ve also made two small balls out of one recipe, arranged them on holiday plates, wrapped in cellophane, tied with a ribbon and sprig of holly, and given to neighbors.
